Cases where the pesticide ranking doesn't tell the whole story
Mushrooms score well on the Clean Fifteen because they're grown indoors on controlled substrate with no field pesticides. But mushrooms are bioaccumulators — they absorb whatever is in their growing medium, including heavy metals like cadmium, lead, and mercury. Organic certification doesn't regulate substrate quality for these contaminants, so "organic" mushrooms aren't automatically cleaner on this front. If you eat mushrooms regularly, varying your source (different farms, different species) is more useful than buying organic.
Broccoli, cauliflower, Brussels sprouts, and cabbage consistently score well on pesticide testing — they have natural defence compounds that reduce how much spray is needed. But these same compounds (glucosinolates, which break down into goitrogens and thiocyanates) can suppress thyroid function at high intake, particularly if you're already iodine-deficient. Cooking deactivates most of them. This has nothing to do with whether you buy organic — it's just worth knowing if cruciferous veg are a daily staple.
Oranges, lemons, limes, and grapefruit rank in the middle of the pesticide tables — not as bad as spinach or strawberries, but not clean either. If you're eating the flesh only, conventional is usually fine. The issue is the zest: pesticides concentrate heavily in citrus peel, and the peel is where all the flavour compounds are. If you use zest in cooking or drinks, buy organic citrus. If you never touch the skin, conventional is acceptable.
Different crop, different rules — the pesticide conversation here is more complicated
Tea leaves are dried and steeped, not washed before drinking. Whatever pesticide residue is on the leaf goes into the cup. Most commercial tea — including premium brands — is grown in countries with much weaker pesticide regulation than Australia or the US: China, India, Sri Lanka, Kenya. Testing by consumer groups in the US and Europe has repeatedly found residues of pesticides that are banned in Western countries on imported tea.
Beyond pesticides, conventional tea cultivation often uses synthetic fertilisers heavily, which affects soil health and can affect the mineral profile of the leaf over time. Organic certification at minimum guarantees no synthetic pesticide use and independently audited soil management practices.
The exception: Japanese teas (matcha, gyokuro, sencha) tend to test cleaner even when not certified organic, because Japan's domestic food safety standards are very high. Still worth checking the specific brand.
Roasting destroys most pesticide residues — by the time you're drinking brewed coffee, very little pesticide remains in the cup. So unlike tea, the direct health argument for organic coffee is weaker.
The stronger argument is environmental and social: conventional coffee farming uses some of the heaviest pesticide application of any crop globally, much of it in countries with poor worker protections. Shade-grown, organic-certified coffee also tends to support biodiversity in ways monoculture plantations don't.
One genuine health caveat: mould (mycotoxins, specifically ochratoxin A) is more of a concern in coffee than pesticides. It forms in poorly stored or low-quality green beans. Choosing high-quality single-origin coffee from reputable roasters — whether or not it's certified organic — is probably more protective against mycotoxins than the organic label alone.
Local options that take sourcing seriously — not an exhaustive list
Specialty roaster focused on ethically sourced, traceable single-origin beans. Their sourcing relationships emphasise direct trade with farms that use responsible growing practices, including organic or low-input methods. Consistently high cup quality, which also tends to correlate with better post-harvest handling (lower mycotoxin risk).

Thin, porous, or rough-textured skins absorb and trap residue. Thick, smooth, or inedible skins — anything you peel off — act as a barrier. This is the single biggest predictor of where a food lands on the list.
Crops grown close to the ground (strawberries, spinach, potatoes) are more exposed to soil-applied pesticides and fungal pressure. Crops grown on trellises or inside husks have less contact with sprayed surfaces.
When something jumps onto the Dirty Dozen unexpectedly — like potatoes in 2025 — it's usually because one specific pesticide was flagged in that testing cycle, not because the crop suddenly got much worse overall. Worth reading the EWG detail rather than just the headline.
Washing removes surface residue but not systemic pesticides (ones absorbed into the plant tissue). For high-residue produce, washing is still worth doing, but it won't bring a Dirty Dozen item down to Clean Fifteen levels.
